– 2 frozen bananas
– 1 cup frozen pitaya flesh (if you don’t have access to the fruit, try Pitaya Plus or AmaVida)
– 20g plant-based protein (hemp, brown rice or pea)
– squeeze of fresh lime juice
– splash of coconut milk
Blend all the ingredients together using a top loading blender or food processor (you may need to add a small splash of water). Mix using your blender plunger until a thick, smooth and creamy consistency forms.
Pour into a bowl and top with your favourite toppings – we love a sprinkle of bee pollen, fresh banana slices, raw pistachios and crunchy coconut chips!
