Think chunk chocolate ice cream… but better!

 

INGREDIENTS

-2 frozen bananas

-2 tablespoons cacao powder

-1 tablespoon almond butter

-1 teaspoon cinnamon

-¼ teaspoon sea salt

-4 frozen coconut milk cubes

-1 tablespoon cacao nibs

-2 tablespoons crushed almonds

 

METHOD

Blend all the ingredients (except the cacao nibs and crushed almonds) together using a top loading, high-power blender, adding a splash of cold water to help blend if you need. Mix using your blender plunger until a thick, smooth and creamy consistency forms. Then by hand, stir in your cacao nibs and crushed almonds for those crunchy chunks.

Pour into a bowl and top with your favourite toppings – we love a sprinkle of bee pollen, pistachios, coconut chips, nut butter and roasted almonds.

If you’re feeling extra fancy, you can even make your own choco chunk bars! Make these by simply pouring 100ml coconut milk into a sandwich bag, mixed with 1 teaspoon of cacao powder. Throw in a handful of crushed almonds, cacao nibs and any other crunch you have to hand! Carefully place this in your freezer and freeze over night. Once frozen and removed from the bag, you should have your very own choco chunk bar! Stab this into your bowl (or bamboo cup) and you’re good to go!
